From Mexican fusion and the art of the taco to coffee mixology and craft beer, Tijuana is serving a new chapter of flavor, creativity, and culture.

This feature is part of San Diego Weekly San Diego Standouts’ ongoing Tijuana Renaissance series, which explores the people, places, flavors, businesses, and cultural spaces helping reintroduce Tijuana to visitors, locals, and the larger Cali-Baja region. In this installment, we follow the city through one of its most powerful storytellers: food.

Tijuana, B.C., Mexico — If one was to find an excuse to return to Tijuana, it would certainly be to re-experience the taste of Mexican cuisine. For us, that became the reason. We spent a day moving into establishments within the city and immersed ourselves inside a unique culinary scenery.

Our journey was spent across a corn-obsessed kitchen led by a son as the Chef supported by family and an ambitious team, a museum devoted to the art of the taco, a bar reimagining coffee incorporated as mixology, and two sisters running a brewery that carries their father’s legacy.

Tijuana’s culinary scene is not simply about where to eat. It is about memory, family, reinvention, fusions from those who have passed through the region, creativity, and the unmistakable feeling of a city that refuses to be reduced to old assumptions.

Interested in diving inside authentic Mexican cuisine? This is a read you don’t want to skip.

The larger Tijuana Renaissance is often seen in the skyline, cultural centers, medical tourism, nightlife, business growth, and creative industries shaping the city’s future. In many ways, the clearest way to understand this movement is through the art of what’s on the table. Food reveals what headlines often miss: the hands, stories, families, risks, and traditions behind a city that continues to evolve without losing its soul.

Carmelita Molino y Cocina

At Carmelita, corn is not treated as a side ingredient. It is treated as a beginning. Every tortilla, tostada, and tamal carries a deeper story about sourcing, patience, and the preservation of Mexican culinary identity in a city constantly moving forward.

There is without a doubt no better way to begin a full day of exploring than at Carmelita Molino y Cocina in La Independencia, Tijuana. Chef José Figueroa and his father received us with one-of-a-kind hospitality. Named after the chef’s grandmother, who sparked his passion for cooking, Carmelita is a charming and comfortable dining room that propels you in a different universe, where most of the components of dishes are centered around corn.

Carmelita’s unique approach to cuisine is built around a deep reverence for maize. Sourced exclusively from small scale family farms across Mexico, nixtamalized and grounded in house, they preserve tradition and flavor before a single dish is plated. From this process comes tortillas prepared on the comal, the foundation beneath every tacos, tostadas, and tamales.

Yet, what makes this establishment purely unique is its devotion to seasonal ingredients, sourced from localities across Mexico and a never ending creativity in the kitchen that makes the menu perpetually evolving. Carmelita is an invite to experience the flavors that commemorate Baja California’s exceptional food heritage.

From the charming presentation of the plates, to the irresistible taste, this establishment is one for all. Indeed, whether a guest is vegetarian, vegan, or none of the above, every option on the menu is carefully created to provide a similar exclusive experience. From the delicious ceviche to the inimitable cauliflower tacos, Carmelita is without a doubt a journey into flavors you can actually taste and an immersive interaction with what Mexican cuisine is really about earning it a Michelin Bib Gourmand award.

From coffee to a menu that changes to surprise guests, there are so many options that each experience can be truly unique. Our personal recommendation is the revisited French (Mexican) toast that takes you on a veritable trip into the chef José Figueroa’s paradise, you won’t regret it!

Carmelita Molino y Cocina

¡No te vas a arrepentir!

The Museo del Taco

The Museo del Taco translated to the Musem of the Taco works because it understands something simple but powerful: the taco is not just food. It is history folded into a tortilla. It is regional identity, street culture, family tradition, and one of the most recognizable ways Tijuana tells its story to the world.

Yes, a taco museum, who wouldn’t dream of that? Located in the Revolucion Avenue in the Zona Centro of Tijuna, the Museo del Taco is a tribute to what some would argue as the most important thing on earth: the taco. This three story building is an unparalleled experience that deconstructs tijuana-style tacos.

After an untypical museum tour that takes you through history and practices, different rooms that represent aspects of what makes up a taco in an artistic manner, as well as plenty of photo opportunities as pictured, we ended with the most crucial part and that was tasting the tacos. Fair to say that did not disappoint. These brought the entire experience together, turning what we had learned about tortilla, charcoal, carne asada, and the Tijuana-style-taco culture into something flavorful and real. There were also vegetarian tacos made with nopales / cactus, available.

Tijuana is a city that’s proud of its culinary scenery, and rightly so. The city regroups some of the most unique taquerias in Mexico where family history, food heritage, and creativity blend together for an exceptional experience that will not fail to impress anyone with a curious palate. So if you’re up for an adventure, the taco museum is worth adding to the itinerary and you can learn some new things about tacos.

¿Quién no querría conocerlo?

Baristi Tostadores

Baristi Tostadores shows another side of Tijuana’s creative evolution: the willingness to take something familiar and make it unexpected. Here, coffee becomes playful, refined, and experimental, proving that the city’s beverage scene is not only growing, but redefining what visitors may think they know about taste. They also craft non-caffeinated drinks on request.

The adventure continued at Baristi Tostadores in Paseo de Los Heroes in Zona Urbana Rio, Tijuana. Launched in 2017, the Coffee Bar project creates a new trend in coffee consumption: alcohol-free coffee mixology. Drinks inspired by classic cocktails, in which liquor is replaced with cold brew. In March 2020, the second phase of the project, Coffee & Mixology, was launched and Baristi Tostadores became the first bar in the country to unite together high-end cocktail making and specialty coffee. Interestingly, they are so committed to their art and understanding the science of coffee that they created and patented their own coffee machine so that they can adjust the precision of measurements, temperature, among other functions so that they can add their precise touch to every drink.

Based in a foundation of using Mexican specialty beans and focused on traceability and the support of local producers, their approach is anchored in the production of high-end cocktails, and we felt immediately. Their original and finely curated menu breaks the code of a classic cocktail bar by implementing an elegant touch of coffee to it such as the Coffee and Tonic or the Old Fashioned Smoked. If you do not fancy coffee as much, Baristi Tostadores also provides a wide selection of cocktails from the classics we all know to their own unique creations that are able to be made with or without coffee products and will outpace your expectations.

Whether you arrive for laughter, conversation, a quiet afternoon of work, or the late evening vibrant lounge music vives with premium quality drinks, Baritsti Tostadores is a must visit. Its décor transports you into the unique world of a coffee bar: an immersion in the flavor, creativity, and excellence that Tijuana has to offer.

Baristi Tostadores

Mexica Brewery

Mexica Brewery brings the story full circle because it is not only about craft beer. It is about two sisters carrying forward a family legacy while helping shape Tijuana’s modern craft beverage identity. In a city known for adaptation and reinvention, their story feels especially fitting.

We thought our tour had to come to an end, but to lift up the spirits there was no better place to end the visit than at Mexica Brewery off Avenida Revolucion passageway. There we were received, once more, with exceptional warmth into the universe of Ximena and Karla Lopez Herrera, two sisters who pioneered the Tijuana craft beer industry thanks to the legacy of their father.

Mexica Brewery is a story of legacy. Their passion for brewing began at approximately 15 years old when their father worked for the Mexicali Brewery in the 1980s in Tecate, Mexico, preserving knowledge and tradition they continued his legacy into what is today a unique identity within Tijuana’s craft beer culture.

Produced inside the establishment, Mexica offers seven different types of signature beers and food including the Coco Honey Porter, a porter brewed with honey and coconut flavors, truly unique in itself. We also had a tasty sample of their sliders with shredded beef, fries, and elote on the cob, which was delicious. Whether you are an avid fan of beer or an amateur, Mexica is one place that will redefine the boundaries of what an excellent beer means to you. A key ingredient is the quality of the water used for production that helps bring out a rich taste that standouts from other beers.

Yet beyond the pleasant atmosphere and quality of the products, Mexica is grounded by its family story behind the brewery, one that makes you feel like walking into a nostalgic place where you can relax and feel at home.

Mexica Brewery

Why This Matters Now

If there is a single takeaway from this outing spent in Tijuana it is that this place carries the perfect representation of what “unique” actually means. For anyone within reach of San Diego, California, the only real mistake is treating Tijuana as a place to drive past. Come hungry, stay long enough this time, and let the city show you exactly what it means to be one of a kind. The table is already set. The only question is when you will pull up a chair.

This article is not only a food guide of just a small example of what is available. It is a reminder that Tijuana’s renaissance is happening in kitchens, breweries, markets, museums, family businesses, and neighborhood spaces where people are building experiences with intention. For San Diegans, Tijuana is close enough to revisit to rediscover. For visitors, it is a city that rewards curiosity. And for anyone who has not crossed into Tijuana in years, this is an invitation to return with an open appetite and see a new perspective. The larger Tijuana Renaissance series began with a simple idea: this city deserves to be seen, heard, tasted, felt, and understood in a more complete way. This culinary journey is one chapter in that story.
